Beef Enchiladas


I threw these together for supper tonight and they were great! You can really use whatever you want to make these...just throw it all together and they will probably turn out great! This is what I did:

Ingredients
Corn tortillas
enchilada sauce (packet)
1lb ground sirloin
1 onion chopped
3 cloves garlic chopped
a handful of grape tomatoes slice in half
1 cup rice
1 tbs butter
taco seasoning packet
cheese - I used a little cheddar and mozzarella because that's what I had in the fridge


Directions:

Heat over to 350
make enchilada sauce according to packet. Mine called for water and tomato paste. I didn't have any paste...so I just used water and it was still good! You can also just buy the sauce in a jar and not have to make it at all!
Next brown sirloin with 1/2 chopped onion...drain grease...add taco seasoning packet and a little of the enchilada sauce stir together.
Take each tortilla and dip it into the enchilada sauce...put a little meat in it...add a little cheese, roll up and place in dish. Repeat until you have filled your baking dish. Pour the remaining sauce on top...top with cheese and other half of chopped onion and bake for about 20 minutes. Serve!! YUM!

Rice:
Instead of water I use chicken broth...add garlic and tomatoes to the rice and water before it boils. Once it boils turn once, cover and reduce heat let cook about 15-20 minutes...DONE! This is a great rice recipe. It adds flavor to the regular boring rice flavor!

Peanut Butter, Chocolate, Oatmeal Bars


Have you ever participated in the recipe exchange email thingy?? Well, if you haven't you should. It's lots of fun and you can end up getting lots of yummy recipes. This was one of the recipes I received the last time I played. It was too easy to not try. Boy are these YUMMY!! Not low in fat at ALL!!!! but yummy!!!!

1 stick of butter
2 cups of sugar
3 Tablespoons cocoa
1/2 cup milk
1 teaspoon vanilla
1/2 cup peanut butter
3 cups of oats
Place wax paper on counter.Have all ingredients measured out.Melt butter in skillet low heat.Add sugar mix well,add cocoa and stir.Add milk and vanilla.Stir and let boil.When entire skillet boils, time for 1 minute.Remove from heat add peanut butter and oats.Drop by tablespoons on to paper.
