Pea Salad


Even if you aren't a pea lover you might still like this salad! A girl I work with makes it at all of our work gatherings and everyone LOVES it! Me included:-) It's simple to make and a perfect side dish for supper or something to bring when going to a cookout!

Ingredients:
2 cans of peas drained
1/2 onion chopped small
1 handful of shredded cheddar cheese
2 tablespoons of mayo
2 tablespoons of sweet pickle relish
2 eggs boiled, peeled and chopped
salt and pepper to taste

Directions:
Mix everything in a bowl...add more of anything you need to your liking:-) Serve right away or refrigerate until served. I think it's better once it sits in the fridge for a while.

Lime Chicken


Ok...so my step daughter Haley is SUPER picky!! I don't make weird stuff....but she doesn't seem to like ANYTHING I cook...so I am trying to find healthy recipes that she will eat. She will always eat fast food...candy...etc....like most kids....but has a hard time with healthy food. She mentioned that her Mom makes a lime chicken that she really likes...so I got the recipe from her Mom. It's marinating today and I will grill it tonight. I have tried a lime chicken before that wasn't so great...didn't have much flavor...hopefully this will turn out better!! I will post a picture tonight after it's been grilled! I will let you know how they turn out!!

Ingredients:
3 Chicken Breasts (pound down a little so they will cook evenly)
1 lime juice concentrate ( I am using the frozen lime margarita mix because I have it in my freezer)
1 chopped onion
4 garlic cloves peeled and chopped
pepper

Directions:
Mix all ingredients together and marinate all day.

Grill...and enjoy!

UPDATE:
Well..... Joel didn't like the chicken...but I did. It didn't have tons of flavor...but still wasn't bad. I will make it again. The only thing I will do differently is brush a layer of BBQ sauce on the chicken right before it comes off the grill!

Cheesy Pigs in a Blanket


Great snack for everyone:-) They are really easy to make and taste great!!!

With 8 crescent rolls
cut 4 hot dogs in half
split each hot dog half down the middle and stuff with cheddar cheese
...
roll each dog in crescent roll
bake for 15-20 minutes until crescents are brown


dip in mustard...ketchup...ranch...whatever you like!

Pizza Snack Bites


I had some wheat wraps left over that I had planned on using fir sandwiches...but it didn't happen...and I sure don't want to waste them....so I decided to make some pizza bite snacks today. They hit the spot!! Kids LOVED them! Great snack to eat up while watching football:-) The picture isn't the best...but you get the idea:-)

Brush each wrap with olive oil on both sides...bake in oven (370) for about 5 minutes...until crispy. Take out of oven and spread pizza sauce, cheese and whatever toppings you like:-) Put back in the oven for about 5 more minutes...until cheese is bubbly....cut up and serve...easy as pie!!

"Oh Baby" bars


I am sure going to be saying "oh baby" look how big my butt is getting if I eat too many of these bad boys! Dang....homemade Reese's....I really shouldn't have! They are just too darn easy not to try....oh well! Work out extra...eat more....that's ok right????

Peanut butter crust:
1/4 butter softened
2 tl brown sugar
1 1/3 cup powder sugar
3/4 cup creamy peanut butter

Combine until pasty.....spread in bottom of a 9x13 in pan.

Chocolate Topping:
7 oz milk chocolate
4 oz semi-sweet chocolate
1 t butter

Melt in pan on low heat....spread on top of peanut butter mixture . Stick in fridge for an hour harden...cut into bars and eat em' up!!!!!

These are SOOOOO GOOD!!! You don't ever need to buy Reese's again!!! Make your own:-)

Chicken Taco Casserole


Ok, I got the idea on a website today and threw together my own version tonight with what I had and it turned out great!!!

Here is recipe for the Chicken - I used leftover Chicken Taco meat to make the casserole.

3-4 chicken breasts (Frozen or thawed) Put the chicken breasts in crock pot...add a taco seasoning packet , a can of corn...and enough water to almost cover the chicken. Turn on high for 4 hours.... Shred chicken.


Casserole,

In a bowl mix chicken, about 1/2 cup sour cream, a handful of cheddar cheese, can of corn (drained),and about 1/2 cup of salsa.

In casserole dish layer corn tortillas and chicken mixture ending up with the chicken mixture on top. Top with cheddar cheese...bake for about 30-40 minutes on 350. ENJOY!!!!

Pumpkin Cream Pie


Once again...I LOVE the Pioneer Woman! Try this recipe this Thanksgiving:-) It's yummy! This is also her picture...I have really been lazy at picture taking:-(


Ingredients:


FOR THE CRUST:
1-½ package Graham Crackers (about 15 Cookie Sheets)
½ cups Powdered Sugar
1 stick Butter, Melted
FOR THE FILLING:
1 box (3 Oz. Box) Vanilla Pudding (Cook And Serve Variety)
1 cup Half-and-half
½ cups Heavy Cream
Pinch Of Cinnamon
Pinch Of Nutmeg
Pinch Of Ground Cloves
2 Tablespoons Whiskey (optional)
½ cups (plus 3 Tablespoons) Pumpkin Puree
½ cups (additional) Heavy Cream
2 Tablespoons Brown Sugar
Extra Graham Cracker Crumbs, For Garnish


Directions:

Preheat oven to 300 degrees.
Grind graham crackers in a food processor (or, if you don’t have a food processor, place them in a large ziploc and pound ‘em with a rolling pin.) Add powdered sugar and melted butter and process until totally combined. Press into the bottom and sides of a pie pan until nice and firm. Bake for 8 to 10 minutes, or until warm and “set.” Remove from oven and allow crust to cool completely.
In a medium saucepan, mix dry pudding mix with half-and-half and cream. Add spices. Bring to a boil over medium heat, stirring constantly, until mixture is bubbly and thick. Remove from heat and stir in whiskey, if using. Add pumpkin and stir to combine. Place lid on pot and set aside to cool. When cool enough, place pot in the fridge to cool completely.
When mixture is cool, remove from the fridge. In a mixing bowl, add 1/2 cup heavy cream and brown sugar. Beat until very light and fluffy. Fold in pumpkin cream mixture until combined. Pour into cooled crust.
Cover and refrigerate for a couple of hours or overnight. Serve with graham crackers crumbled on top.

Sweet Onion Potatoes Au Gratin

These are DELICIOUS! They will add a few pounds to the hips...but worth it!! THis is a Rachael Ray recipe:-) Enjoy!!

Ingredients:

2 tablespoons butter
1 large or 2 medium sweet onions, such as Vidalia, thinly sliced
Salt and freshly ground black pepper
1/2 teaspoon ground thyme
1 bay leaf, fresh or dried
2 pounds baby Yukon gold potatoes or fingerling potatoes
1/2 to 2/3 cup heavy cream
1/2 cup grated Parmigiano-Reggiano
1/2 pound brick Gruyere or Swiss cheese, shredded

Directions:
Heat a small skillet with the butter over medium heat. Add the onions, season with salt ground thyme, bay leaf and cook until very soft and sweet and lightly caramelized, 20 minutes. Season with salt and pepper, to taste, and discard the bay leaf.
While the onions cook, put the potatoes in a medium pot and cover with water. Bring to a boil, then salt the water and cook to tender, 12 to 15 minutes. Drain and return the potatoes to the hot pot. Mash the potatoes with the cream and Parmesan and season with salt and pepper, to taste.
Preheat the broiler.
Arrange the mashed potatoes in individual gratin dishes or 1 shallow casserole. Top the potatoes with the onions and Gruyere cheese. Put them on a sheet pan and brown under a hot broiler until bubbly, about 2 minutes. Remove from the oven and serve hot

Leftover Hot Dog Buns???

I had TONS of them leftover from our Halloween Party and just couldn't bring myself to let them go to waste...so I used every one of them this week...and we had eight packages!! Here are the recipes. They are all REALLY good too! You won't get sick of all of the hot dog buns either...lol.

Tune Melts:
2 cans chunk white tuna, drained
4 hard boiled eggs, peeled and diced
1/3 cup finely chopped onion (optional)
1/3 cup sweet or dill relish (whichever you like)
1/2 cup cheddar
1/3 cup mayo (fat free)
salt and pepper to taste
8 hot dog or hamburger buns

Mix all ingredients (except buns!) in a largish bowl, gently, so the cheese mixes in evenly.

Open the buns, and put them in a baking pan, about 9x13. divide the mixture evenly between the buns, close the buns, and top the baking dish with foil.

Bake them in a 375F oven for about 20-25 minutes, until the cheese is melted and the buns are toasted/crunchy when you press on them.

Cinnamon Toast

Split hot dog buns in half.
Put 3 dabs of butter on each bun...then sprinkle sugar and cinnamon on top of each bun. Broil in over for about 2 minutes or until sugar/butter mixture is bubbling.
YUM!!!!

Sausage/Onion/Pepper Sandwiches

These were a BIG hit! My husband asked that I make these again soon!

1 beef sausage link sliced
1 small onion chopped
1 bell pepper chopped
cheddar cheese.....about 1/2 cup
olive oil
pepper
cajun seasoning

Saute sausage in a tbsp olive oil for about 5 -7 minutes or until hot and browning....add onion and bell pepper...saute about 5 more minutes until onion and peppers are soft. Add pepper and cajun season for flavor...you can add as much as you want depending on how much spice you want.

Open hot dog buns and place sausage mixture in each bun....top with shredded cheddar cheese. Add sandwiches to a baking sheet and broil in oven long enough to melt the cheese...and toast the buns...about 2 minutes! ENJOY! These are REALLY good:-)

Garlic Bread

Split buns in half...spread soft butter on each bun....sprinkle garlic powder, Parmesan cheese and mozzarella cheese on top. Broil for about 2 minutes until cheese melts and bread browns a little. GOOD!!!!

Butter Roll Bites
Spread soft butter on each bun....broil for about 2 minutes....Cut each bun into a bite size piece. These are a great substitution for rolls:-)

There are TONS more that you could try...these are just a few I tried and really enjoyed them all! It's a great way to use up extra stuff that would normally just sit around and go bad:-)

Tuna Melt

Ok...sorry there isn't a picture this time....I am just not in the mood today. But...I want to share this recipe with you....it was a hit:-) I have TONS of leftover hot dog buns...and needed to find recipes to use them all...besides the obvious...hot dog:-) This is a recipe I found. It's REALLY good!! Super easy...and not horrible for you. Use low fat mayo...and you are good to go! The next time I make them I will add a picture!

Beef Enchiladas


I threw these together for supper tonight and they were great! You can really use whatever you want to make these...just throw it all together and they will probably turn out great! This is what I did:

Ingredients
Corn tortillas
enchilada sauce (packet)
1lb ground sirloin
1 onion chopped
3 cloves garlic chopped
a handful of grape tomatoes slice in half
1 cup rice
1 tbs butter
taco seasoning packet
cheese - I used a little cheddar and mozzarella because that's what I had in the fridge


Directions:

Heat over to 350
make enchilada sauce according to packet. Mine called for water and tomato paste. I didn't have any paste...so I just used water and it was still good! You can also just buy the sauce in a jar and not have to make it at all!
Next brown sirloin with 1/2 chopped onion...drain grease...add taco seasoning packet and a little of the enchilada sauce stir together.
Take each tortilla and dip it into the enchilada sauce...put a little meat in it...add a little cheese, roll up and place in dish. Repeat until you have filled your baking dish. Pour the remaining sauce on top...top with cheese and other half of chopped onion and bake for about 20 minutes. Serve!! YUM!

Rice:
Instead of water I use chicken broth...add garlic and tomatoes to the rice and water before it boils. Once it boils turn once, cover and reduce heat let cook about 15-20 minutes...DONE! This is a great rice recipe. It adds flavor to the regular boring rice flavor!

Peanut Butter, Chocolate, Oatmeal Bars


Have you ever participated in the recipe exchange email thingy?? Well, if you haven't you should. It's lots of fun and you can end up getting lots of yummy recipes. This was one of the recipes I received the last time I played. It was too easy to not try. Boy are these YUMMY!! Not low in fat at ALL!!!! but yummy!!!!

1 stick of butter
2 cups of sugar
3 Tablespoons cocoa
1/2 cup milk
1 teaspoon vanilla
1/2 cup peanut butter
3 cups of oats
Place wax paper on counter.Have all ingredients measured out.Melt butter in skillet low heat.Add sugar mix well,add cocoa and stir.Add milk and vanilla.Stir and let boil.When entire skillet boils, time for 1 minute.Remove from heat add peanut butter and oats.Drop by tablespoons on to paper.

Spaghetti Pie



Just another way to make spaghetti...easy...and still tastes good:-)

Ingredients:
1 jar of spaghetti sauce
1 lb ground turkey (or beef)
salt and pepper
1/2 large onion chopped
2 cloves of garlic pressed
1 package thin spaghetti noodles cooked and drained
mozzarella cheese
cheddar cheese
parmesan cheese

Directions:

Saute onions and garlic for about 5 min over med heat...add turkey and cook until done. Drain any liquid. Add jar of spaghetti sauce mix with turkey and onion mixture. Cook noodles and drain. In a baking dish layer spaghetti sauce, mozz cheese, cheddar cheese and parmesan cheese (just a little of each...less then 1/2 cup all together), then noodles. Repeat and finish with cheese on top.

Bake on 350 for about 20 minutes until cheese is melted and everything is hot and bubbly.

Sausage and Cabbage Stir Fry


I threw this together the other night and Thomas and I really enjoyed it. Super easy...and good for you:-)

Ingredients:
I package of beef sausage
1 head of cabbage...green or red...or mixed 1/2 of each like I did
1 tsp cayenne pepper
salt and pepper
olive oil
one package sliced mushrooms...I used baby portabellas
1 bell pepper any color
1/2 large onion chopped
You can add any other veggies you like to this dish...


Directions:
Heat a little olive oil in pan on med high. Add sausage and bell pepper...cook for about 2 minutes...then add everything else except the cabbage. Stir fry for about 2 more minutes. Last add the cabbage and stir fry for another few minutes until the cabbage is cooked...but not mushy. Season with salt and pepper. Serve!!! YUMMY!!!!

BBQ Pork Chops


These were really good and super simple to make. If I had an onion I would have added it...but didn't have one on hand.

Ingredients:
3-4 boneless thick cut pork chops
BBQ sauce
onion (if you have one on hand)
salt and pepper
garlic powder (or fresh if you have it)
olive oil, butter


Directions:
Put a tablespoon of butter and a dribble of olive oil in the skillet(FYI...butter and olive oil together will not get too hot)...heat to med high. Brown chops on both sides for about 2 minutes each side. After the chops are brown...lower heat to low...add BBQ sauce to pan...about a cup. Flip chops back and forth to cover with sauce...add onions now if you have them....cover pan and simmer for about 10 minutes or until chops are done.

White Chocolate Blueberry Ginger Cookies


OMG...I found this "healthy" or I guess you could say "healthier" cookie recipe. I am no Betty Crocker...but would love to learn more about baking...and don't want to get fat in the process...so I have decided to only try healthy baking recipes....ok...maybe not "only"...but mostly:-)

Have you ever cooked with crystalized ginger??? Yeah...you and me both....well it's GOOD STUFF!!!! You have to try these cookies....just trust me when I tell you they are delicious!!! Just as delicious as any of the cookies that are full of chocolate, sugar and butter...yeah really:-)

Southwest Turkey Burritos


I made these for supper tonight...they aren't a lot different from regular burritos...just a little healthier:-)....and they were delicious!!!

Ingredients:
Flour tortillas (wheat would be better...but I didn't have any)
1 lb ground turkey meat
1 package taco seasoning
lettuce
sour cream
1 can of corn
1 can of black beans
southwestern salsa (any kind)
cheddar cheese

Directions: Make taco mixture as package says. Heat tortillas....Build burrito as usual.....with meat, beans, corn, lettuce, sour cream, cheese and salsa. I would have added avocado and tomatoes if I had some..mmmm...good!!!

Meatball Sliders


So easy...fun to make....and delicious!!!

Ingredients:
Bag of frozen meatballs (or make your own)
Package of Hawaiian sweet rolls...mmmmm
Provolone cheese
salt and pepper
your favorite jar of spaghetti sauce (or make your own)


Directions:
Pour sauce in pan...add meatballs....simmer on low for about 30 minutes until meatballs are hot. Toast your bun (or not) add meatball...melt cheese....and serve:-) YUMMY!!

Mushroom Pork Chops


MMMM...these are sooo good....and REALLY easy to make:-)

Ingredients:
4 pork chops (thick boneless)
salt and pepper
garlic salt
season all
1/2 onion chopped
1/2 pound fresh mushrooms sliced
1 can of cream of mushroom soup

Directions:
Season pork bops...brown in skillet (med high heat) with a little olive oil. Move chops to one side of the pan and add onion and mushroom. Saute for a few minutes...then add mushroom soup...bring down to simmer...cover and let cook for about 25-30 min or until the pork chops are done.

Veggie Wraps


I made these for lunch at work yesterday and they were YUMMY!!!!!!!!! What a great healthy lunch...and tasty too! I took a few pics...but they turned out really bad...so I just took the picture from the website. If you are looking for a new healthy "light" lunch you should try these:-)


3 tablespoons of hummus - I used the Pine Nut Hummus by Sabra from Kroger
a handful of Lettuce
a handful of Diced Seedless Cucumber
a handful of Diced Tomatoes, seeds removed
a sprinkling of thinly sliced scallions (aka green onions), to taste
a sprinkling of crumbled Feta Cheese


Spread with entire wrap with hummus and sprinkle with the other ingredients, leaving a border without filling along the far end. A little goes a long way, and too much filling will make it hard to wrap up. Wrap up and ENJOY!!!!!!!!!!!!

BBQ Pork Ribs


YUM!!!!!!!!!!!!!!! Everyone loves ribs right? Joel and I found a recipe that we LOVE!! Some people say you aren't supposed to bake ribs....I say.....whatever!

Directions:
Rinse rack of ribs under cool water..pat to dry. Season both sides with salt, pepper, garlic and a little season all. Place ribs in baking pan bone side down. Cover with foil and bake on 250 for about 2 hours or until the robs are done. Take ribs out of the oven...brush with BBQ sauce...wrap in foil and put on the grill for about 15-20 minutes. Pull ribs out of foil...and finish them on the grill while brushing more BB sauce on them. YUM!!! These were delicious...fall off the bone...greatness!!!

Boiled Egg Sandwich


My Pee Paw use to make this when I was a kid...and no one could ever make them as good as he could:-) I didn't put any lettuce on this one like he use to because I didn't feel like breaking out the whole head of lettuce for one little piece. If you like boiled eggs...you must try this if you haven't already. It's REALLY good....and easy to make...and chances are you already have everything you need in your kitchen.

Ingredients:
2 eggs
2 slices of bread
1 tablespoon of mayo
salt and pepper
lettuce if you want:-)


Boil and peel the eggs. Toast the bread. Spread mayo on both sides of toasted bread. Slice eggs onto bread...top with salt and pepper. Enjoy! Oh...add lettuce if you want...

White Chicken Enchiladas

Ok so my picture isn't the best...I didn't have much light to work with people...but don't let the picture fool you...they are really yummy!

Mexican Rice
1 cup white rice
1 tablespoon veg oil
2 cloves garlic (pressed through one of those squishy things...)
1 tomato seeded and chopped
about 1/2 cup chopped fresh cilantro
salt pepper to taste
1 3/4 cup of chicken broth
1/2 (yellow) onion chopped

Put veg oil in pan and heat to med heat...add rice...cook stirring for about 3 minutes. Add chicken broth and the remaining ingredients and bring to a boil. Stir and cover for about 20 minutes...done:-)

Butter Finger Cake


Yum! This is really good...so good you can taste the "bad" in every bite! Thomas's Nanny sent me some recipes...I can't wait to try all of them. This was soooooo good! Thanks so much Margie for sharing this with me:-)

Ingredients:
1 Duncan Hines - Devil Food Cake Mix
1 jar of caramel ice cream topping
1 can of sweetened condensed milk
1 jar of rich and creamy cream cheese frosting
2 regular size butterfingers

Directions:
Make cake per box directions...when done poke holes in top of cake with fork. Pour can of condensed milk and the jar of caramel all over the top of the cake while cake is still hot. Place cake in freezer for about 15 minutes. Once cake has cooled.....ice with cream cheese frosting and sprinkle butter finger all over the top. Keep refrigerated for up to a week! ENJOY!!!!

Chicken and Sausage Kabobs


I know everyone knows how to make these...so this isn't some "Special" recipe or anything....but I LOVE kabobs...so I thought I would share:-)

Ingredients:
3 chicken breasts
1 sausage (I use beef sausage)
2 bell peppers
a few handfuls of mushrooms
tomatoes (I didn't have them for these kabobs)
Italian dressing
BBQ sauce

Directions:
Marinate the chicken in Italian dressing for at least a few hours. Cut all of the ingredients into bite size pieces...except the mushrooms and tomatoes...leave then whole. Put everything on skewers. Heat grill to medium heat. Cook kabobs for about 10 minutes or until everything is done. Joel like to brush BBQ sauce on his kabobs a few minutes before he pulls them off the grill. I serve them with rice and a salad. YUM!!! Great leftovers too!

Berry Cheesecake


This is delicious!!!

Pie Crust:

1/3 cup Milk
2/3 cup Vegetable Oil
2 1/4 cup Flour
1 tsp Salt

1. Measure the milk and vegetable and combine.
2. In a large bowl add the flour and salt. Pour the wet mixture over the dry and mix with a spoon.
3. Use this pie dough for any sweet or savory pie! Simply press in the pie pan rather than having to roll.

Cheesecake:

8 oz Cream Cheese
1/2 cup Sugar
1 tsp Vanilla Extract
2 eggs
2 cups Strawberries, sliced
1 cup Blueberries
1 TBS Light colored Jam (any flavor such as orange, apricot, peach, etc) I used pineapple
Pie Dough Stars, pie dough star cut outs, baked 15 minutes

preheat oven to 350 degrees

1. Press pie dough into a 9 inch pie pan. Reserve a small piece of pie dough, about 1/4 cup full and set aside for pie dough stars if using. Press dough up the side of the pie pan, and use your finger to press indentions to create a border. Place unbaked pie crust in the fridge.
2. Place the cream cheese and sugar in the bowl of an electric mixer and beat until creamy and fluffy. Add vanilla. With mixer (or hand mixer) on low speed, add eggs one at a time fully incorporating before adding the second egg.
3. Remove crust from the fridge and pour cheesecake batter into crust. Bake for 25- 30 minutes until firm and set in the center, and the crust is lightly tanned. Sprinkle cinnamon over the cake and crust immediately after removing from oven. Sprinkle over the stars (if using). Let cheesecake pie cool completely.
4. Rinse and pat dry the berries. Remove the stems from the strawberries and cut in quarters. Gently place the berries on top on the cheesecake.
5. Boil some water (in the microwave is easiest) and pour over the jam a tablespoon at a time until it has melted and is thick and syrupy. Use a pastry brush to brush the glaze over the berries. This will create the shiny, glossy look.
6. Place the stars on the pie up to three hours in advance to avoid them getting soft or stained. The pie can be made 24 hours in advance.

Chicken and Black Bean Quesadillas


I put these together tonight with what we had in the kitchen...and they were REALLY good!!

Ingredients:
2 chicken breasts
1 bell pepper
black beans (if you use canned drain them first)
4 wheat tortillas
1 tbs butter
seasoning (whatever you want) I used a little Cajun seasoning and a little fajita seasoning on the chicken and bell peppers
shredded cheddar cheese

Directions:
Cook chicken in a little butter and olive oil on med high heat...add sliced bell pepper a few minutes before the chicken is done. Season with whatever seasoning you would like. Once chicken and bell peppers are done...set to the side.
Butter the back of two tortillas and put them on a hot griddle (350). Spread cheese on tortilla, add black beans, bell peppers and chicken...sprinkle with a little more cheese then place the second tortilla on top. Flip when bottom tortilla is brown. Let cook until other side is browned and everything in the middle is melted and hot. YUM!!

Hashbrown Casserole


I love hash brown casseroles! This one is simple to make and yummy!

Ingredients:
6 eggs
1 cup of milk
1 bell pepper (any color) chopped
1 small onion chopped
1 cup sliced mushrooms
handful of fresh spinach chopped
6 slices of bacon
1/3 cup sour cream
enough cheddar cheese to cover the top
salt and pepper for seasoning
2 cups of shredded potatoes (I use the bagged...)

Directions:
Cook bacon and set aside (this recipe could also be used with sausage) Saute the onion, mushrooms, bell pepper and spinach in 1 tbs of butter until soft. In an 8x8 casserole dish put the shredded potatoes. Salt and pepper. Place cooked bacon on top of the potatoes. Put veggie mixture on top of the bacon. Whisk together the eggs, milk and sour cream. Pour egg mixture on top of casserole. (At this point you can refrigerate the casserole until you are ready to cook if if you need to) Cover with shredded cheddar cheese. Bake on 400 for about 35 minutes:-)

Simplified Cabbage Rolls



I LOVE cabbage rolls...but they take a long time to make and it's kind of a pain...If you have the time...that's great...but during the week I don't. I found a way to make them in half the time and they are still just as delicious! If you like cabbage rolls then try this out!

Ingredients:
1 tbsp olive oil
1 bell pepper chopped
1 (small) onion chopped
1 lb ground turkey (or beef) I use turkey
1/2 cup uncooked rice (white or brown)
1 medium cabbage chopped
1 10.5 oz. can of tomato soup
1 can of tomato sauce
1 cup water
pepper to taste

Directions:
Preheat over to 375
Heat oil in skillet, and saute onion and bell pepper until they begin to caramelize. Add the turkey and cook until turkey is done. Add in the rice and set to the side.
Spread chopped cabbage into a 9x13 dish...or use two 8x8 dishes and freeze one for later:-) Top with turkey mixture. Combine soup, sauce, water and pepper in a bowl and poor over cabbage and turkey. Cover with foil and bale for an hour.

Great served with cornbread:-) ENJOY!!

Fried Onion Chops


I am all about easy nut still good recipes. I know that a lot of the recipes that I post most of you are like...duh...I make that all of the time...but I look at it this way. They are NEW to me...and I hope that they bring "easy" ideas to someone else out there that wants to simplify dinner:-)

My friend Alyson told me about this recipe. I just HAD to try it. I have heard you can do it with chicken too and it's good. If you love those little fried onion crunchy things that you put in green bean casserole...then you will love this recipe:-)

Big HINT...the recipe is smack on the back of the onion package...but I will still post it for ya!

4 chops
1 package of fried onion
2 tbls flour
2 eggs (whisked)

I added a little seasoning to my chops before a battered them.

Simply add the package of onions and the flour to a big plastic bad...crush it up until it's just crumbs. Dip your chop in the egg mixture and then pat in the onion mixture...place on foil lined oven sheet...repeat for all chops.

Bake for about 20 minutes on 350 (depending on the size of your chops) until brown...YUM!

Grilled Pizza


Ok...I know this picture isn't the best...but it will have to do....you get the idea right? This is by far the easiest pizza EVER and it's delicious!!!!!

Heat the grill and preheat the oven to 350...Buy whatever kind of crust you want at the store. Bruch both sides of the crust with olive oil. Brown the crust on the grill for about 2-3 minutes on each side or until evenly browned:-) Bring crusts inside and put whatever sauce and toppings your heart desires....then bake for about 15 minutes until everything is hot an bubbly...oh yeah! I LOVE cheese:-) Then EAT! YUM!

Tuna Casserole


This recipe takes me back. My step-mom use to make this when I was a kid and I loved it. I am not sure this is the same recipe she used...but it's pretty close and it was YUMMY! Joel wasn't very excited when I told him we were having Tuna Casserole for dinner...he he. BUT...once he tried he is was quite impressed. It's a very simple, hearty meal that the whole family will enjoy! I am sure it's going to make great leftovers for lunch too!

And just FYI...the carrots that I served with the casserole were really good too and easy! I peeled and cut up about 4 carrots....put them in a pan with 2 tbs of butter and about 1/3 cup of what....seasoned with salt and pepper...covered and cooked on medium high heat until the carrots were tender...about 10 minutes:-)

Ingredients:

  • 1 can (about 7 to 8 ounces) tuna, drained
  • 8 ounces elbow macaroni
  • 4 tablespoons butter
  • 3 tablespoons finely chopped onion
  • 2 tablespoons finely chopped green bell pepper
  • 2 tablespoons all purpose flour
  • 3/4 teaspoon salt or seasoned salt
  • 1/8 teaspoon pepper
  • 1 cup milk
  • 1/2 cup frozen peas, thawed
  • 1 can cream of mushroom soup
  • 1 cup shredded Cheddar cheese
  • panko bread crumbs
Cook macaroni in boiling water according to package directions until tender, drain and rinse.

Melt butter in a large saucepan or Dutch oven; add chopped onions and bell pepper and sauté over low heat for about 3 to 4 minutes, until tender. Add flour, salt and pepper; cook, stirring, until smooth and bubbly. Add milk and mushroom soup and stir over low heat until smooth and thickened. Add cooked drained macaroni, flaked tuna, peas, and about half of the cheese to sauce mixture, stirring constantly. Pour the mixture into 2-quart buttered casserole; top with remaining cheese then bread crumbs. Bake at 350° for 30 to 40 minutes, or until nicely browned.

Salisbury Steak


I have always LOVED Salisbury steak...but never had a good "easy" recipe for it. I found this recipe the other day and had to try it out. It was REALLY good and super easy to make:-) If you like Salisbury Steak....try this one out!!!

Ingredients:
1 (10.5 ounce) can condensed French Onion Soup
1 1/2 pounds ground beef
1/2 cup garlic and herb bread crumbs
1 egg
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon flour
1/4 cup ketchup
1/4 cup water
1 tablespoon Worcestershire sauce
1/2 teaspoon mustard powder

Directions:
In large bowl, mix together 1/3 cup condensed French Onion Soup with ground beef, bread crumbs, egg, salt and pepper. Shape into 4 oval patties.

In large skillet over medium high heat, brown both sides of patties. Pour off excess fat.

In small bowl, blend flour and remaining soup until smooth. Mix in ketchup, water, Worcestershire sauce and mustard powder. Pour over meat in skillet. Cover, and cook for 20 minutes (reduce heat to low). Stir occasionally.

SERVE!! YUMMY!

Cake Balls


OMG...first let me say that if you are a bowl licker...then this is the recipe for you:-) 1st...you get to lick the bowl from the cake mix...then...you can lick the bowl from icing the cake and the icing together..THEN...you can even lick the bowl after dipping the cake balls into the melted chocolate!!! Ok that's some serious bowl lickin'...

My friend Stacey shared this recipe with me. Then she just had to bring some to work...and of course...she broke my arm and forced me to try one..dang it! That evening I told my husband about them...and the next night...well..here I am...making some for him to take to work and share with all of his coworkers. I read he instructions...but really didn't think you would have to let them cool very long...well..it's now 10:15...and they still aren't cool enough to roll in balls....hope this changes soon...or we won't have any cake balls tomorrow.....Let's seee........

Ok....two HOURS later...I was able to finish these suckers....maybe this isn't the best recipe for a weeknight. Oh well! They sure are yummy!

There are so many ways you can make these...make them with you kiddos...what fun!!!

  • 1 (18.25 ounce) package cake mix
  • 1 (16 ounce) container prepared cake frosting
  • 6 ounces of chocolate flavored confectioners coating disks or bar (available in white chocolate, dark or milk)
  • Food Coloring (optional)
  • Paula's Favorite Combinations:
  • *Red Velvet Cake/Cream Cheese Frosting and dipped in white chocolate coating
  • *Strawberry Supreme Cake/Strawberries and Cream Frosting - Dipped in Chocolate Coating
  • *White Cake/Mint Chocolate Chip Frosting - Dipped in Chocolate Coating
  • *Caramel Cake/Chocolate Mocha Frosting - Dipped in Chocolate Coating
  • *White Cake/Wild Cherry Vanilla Frosting - Dipped in Dark Chocolate Coating
  • *French Vanilla Cake/White Chocolate Almond Frosting - Dipped in Chocolate Coating
  • *Dark Chocolate Cake/Cream Cheese Frosting - Dipped in White Chocolate Coating
  • *Spice Cake/Cream Cheese Frosting - Dipped in White Chocolate Coating
  • *Lemon Cake/Lemon Frosting - Dipped in White Chocolate Coating
  • *Confetti Cake/Vanilla Frosting - Dipped in White Chocolate Coating

Steps

Prepare the cake mix according to the directions on the box. When cake is finished baking allow to cool for 30 minutes. Crumble the cake into a large bowl using a stand mixer or a hand mixer. Add the frosting and mix until well combined. Place the bowl in the refrigerator for at least 3 hours or overnight. ( I made them work after 2 hours)

Line a baking tray with wax paper. Use a melon baller (or spoon) as a scooper to form balls with the cake mixture. Place on wax paper. Once you have used all of the cake mixture, place the baking tray in the freezer for 1 hour. Melt the chocolate in a glass bowl of the microwave, stirring every 5-10 seconds until smooth. At this point you can add a bit of food coloring if you are using white chocolate.

Remove the balls from the freezer. Using one toothpick, pick up the balls one at a time and dip in the chocolate. Use a second toothpick to slide the ball off the first toothpick onto the wax paper lined baking tray.

Once you have covered all the balls in chocolate coating place the tray in the refrigerator until the chocolate coating is set. At this point you can drizzle other chocolate on the balls for decoration.

Pulled Pork Sandwiches


I love pulled pork. The roast isn't cheap...but it makes soooo much food. You can have pulled pork sandwiches...tacos...and whatever else you want with all of the meat:-) So...in the long run...making a big roast saves you money. I used about a 2 1/2lb pork shoulder (bone in) roast. Super simple...leave it on the crock pot all day...and you have supper almost done when you walk through the door...now that's my kind of cookin' on a day that I don't feel like doing much! Oh...and you might ask...why bread instead of a bun?? Well...it's simple. We have lots of bread...so why by buns for just one meal? Seems like a waste to me:-) Hey...trying to save wherever I can!

Ingredients:
2 1/2 lb pork roast
1 med onion sliced
salt and pepper
4 cloves of garlic chopped
worchestershire sauce about 1 tbs
water (enough to come half way up the roast in the crock pot)

Directions:
Place sliced onion in bottom of crock pot. Put roast on top of onion. Add the rest of the ingredients to the pot. Cover and cook on low heat for about 10 hours. I left my house at 7:15am....got home at 5:30 and it was perfect:-)

Coleslaw:
1 bad of coleslaw mix
(follow directions on back)
except...use 1/2 the amount of celery seeds and add more sugar until the coleslaw is to your liking. I like mine a little sweet:-)

Cream Cheese Pasta



What is there NOT to like if it has cream cheese in it..right?? I heard someone talking about adding cream cheese to spaghetti sauce for a more creamy sauce. I had never tried it before so decided I would. It was really good. The only thing I would have done differently is use less pasta.

Ingredients:
Penne Pasta (about 4 cups cooked)
spaghetti sauce ( 1 jar)
mozzarella cheese - about 1/2 cup
panko bread crumbs - about 1/2 cup
cream cheese - 1/2 cup
1 lb turkey (ground) - or you could use hamburger
1/2 onion chopped
1 bell pepper chopped (any color)
parmesan cheese


Directions:
Saute the onions and bell pepper for about 4-5 minutes...then add turkey...cook over medium high heat until done. Add spaghetti sauce and cream cheese...stir until creamy...add salt and pepper if needed for taste. Cook noodles until almost done. Mix noodles and sauce together in a baking dish....cover and bake for about 15 min. Take cover off and sprinkle parmesan, mozzarella and bread crumbs on top of pasta...broil for about 3 minutes. Enjoy!

Chocolate Covered Strawberries


Ok...this doesn't take much skill I know....but man are they good!!! Not to mention how pretty they are:-)

Ingredients:
About 10 large strawberries with long stem on them....or you can put a skewer in them.
Semi Sweet bakers chocolate (5 blocks)
Milk Chocolate semi sweet chocolate chips (about 1/2 cup)
White Bakers Chocolate (3 blocks)

Directions:
Clean and dry strawberries
Mix the bakers chocolate and chocolate chips in a microwave safe bowl. Melt in microwave for a minute at a time...stirring in between until chocolate is melted. If the chocolate is a little too thick you can add just a tad bit of vegetable oil to the chocolate.
Melt the white chocolate the same way in a different bowl.
Dip strawberries in dark chocolate or white chocolate and drizzle with other chocolate...or sprinkles...nuts...coconut...whatever you like:-)

Let sit on wax paper for about 30 minutes in fridge until the chocolate hardens...then eat every one of them:-) YUM!!! These are sooooo good!

Crab Cakes


YUM! Crab Cakes are my favorite!! I have never cooked them until tonight. I decided to make them for Valentine's dinner for my two favorite men:-) They were absolutely delicious! One thing I hate about restaurant crab cakes is they are more cake them crab:-( NOT THESE....they are ALL CRAB!! It's not a cheap meal....but it was well worth it and made for a perfect Valentine's meal:-)

Ingredients:
1 pound lump crab meat (don't get the cheap stuff....should be at least 15-17 bucks per 8oz)
3/4 cup panko bread crumbs
1 egg
3 tbls mayo
1 tbls worcestershire sauce
1/4 cup milk
1 tsp dijon mustard
2 green onions sliced
1 tsp tabasco sauce
salt and pepper
oil
butter

Directions:
Preheat oven to 400
Mix the crab, bread crumbs, egg, mayo, worcestshire sauce, mustard, green onions, tobaso, salt and pepper in a bowl.
Form the crab mixture into patties. This about of crab should make 4-5 good size patties.
Heat oil and melt butter in a pan...about a tbls of each.
Fry in pan about med-high heat for 2-4 minutes per side. Then put in oven proof dish and bake on 400 for about 10 minutes.

Broccoli Salad


My sister made this DELICIOUS salad at her house and I just had to get the recipe from her. You must try this! It really is to die for:-) Thanks Britney for sharing the recipe. It's easy to make and is perfect to take to your next family/friend get together.

Ingredients:
4 cups broccoli florets
1 cup mayonnaise
1/3 cup sugar
1 tbsp vinegar
9 slices of bacon
1/2 cup sunflower seeds
1 cup green grapes
1 cup cheese
1/1 cup chopped red onion

Directions:
Mix mayo, sugar and vinegar in a bowl.

Mix remaining ingredients with dressing in large bowl and serve. YUMMY!!!! ENJOY!

Chicken, Potato and Corn Chowder


Tried this new soup recipe tonight and it was really yummy! Perfect for a cool rainy night like tonight. I served this with french bread and the bread dipped in the soup was sooooo good! Will make this one again for sure!

Ingredients:
  • 3 slices Bacon
  • 1 pound Chicken Breasts, Skinless & Boneless, Cut Into Bite-sized Pieces
  • 1 cup Chopped Onion
  • 1 cup Diced Red Bell Pepper
  • 2 cloves Garlic, Minced
  • 1 can (4 Oz. Can) Diced Green Chiles
  • 5-¼ cups Low-salt Chicken Broth
  • 2 cups Peeled & Diced Russet Potatoes
  • 1 cup Frozen Whole Corn Kernels
  • 1 can (14 Oz. Can) Creamed Corn
  • ½ cups All-purpose Flour
  • 2 cups Skim Milk
  • 1-½ cup Grated Sharp Cheddar Cheese, Plus More For Garnishing
  • ¼ teaspoons Cayenne Pepper
  • Salt And Pepper
  • Chopped Scallions For Garnish
Directions:

Cook bacon in a large saucepan over medium heat until crispy. Remove the bacon from the pan and let drain on a piece of paper towel. Set aside.

To the bacon drippings, add chicken, onion, red bell pepper, and garlic. Cook, stirring occasionally, for 5 minutes. Add diced green chiles and cook for an additional minute. Add chicken broth and potatoes. Bring to a boil, reduce heat, cover, and simmer for 20 minutes, or until the potatoes are tender. Add frozen whole-kernel corn and creamed corn, and stir well.

Pour flour into a medium bowl. Gradually whisk in skim milk. Add the milk mixture to the soup and cook over medium heat, stirring frequently, until the mixture thickens, about 15 minutes. Stir in grated sharp Cheddar cheese and cayenne pepper. Season with salt and pepper.

Ladle the soup into bowls and garnish with chopped scallions, grated Cheddar cheese, and crumbled bacon. If desired, break some tortilla chips over each portion of soup.

Mega Chocolate Cake



If you are a chocolate lover then you will LOVE this cake. It is all kinds of chocolaty!!!! It's really yummy with a scoop of vanilla ice cream too:-)

Ingredients:
  • 1 box (18.25 Oz. Box) Dark Chocolate Cake Mix
  • 1 box (3.4 Oz. Box) Instant Chocolate Pudding Mix
  • 3 Tablespoons Dutch-processed Cocoa
  • 2 whole Large Eggs
  • 2 Tablespoons Vegetable Oil
  • 1-¾ cup 2% Milk
  • 1 teaspoon Almond Extract (optional)
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 cup Chopped Pecans
Directions:

Heat the oven to 350 degrees.

In a large mixing bowl, add all ingredients, except the chocolate chips and pecans. Mix on low until fully combined.

Stir in the pecans and chocolate chips.

Grease a Bundt cake pan well and pour in the batter.

Bake for approximately 50 to 60 minutes. Check the cake with a toothpick at the 45-minute mark to see if done. If not, continue cooking for 5-minute intervals until the toothpick comes out clean. My oven took 50 minutes to bake this.

Once cake is done, allow the cake in the pan to cool on a wire rack for 15 minutes. After 15 minutes, turn the cake out onto a cake plate and allow to cool completely. Sprinkle with some powdered sugar or serve with some vanilla ice cream.

Mama's Pot Roast


YUM is about all I can say about this recipe. Who doesn't LOVE Pot Roast??? My Mom makes the BEST!! I am sure most of us think our Mom's roast is the best...but my mama's really is:-)

Ingredients:
3-5 lb chuck roast boneless (look for nice marbling)
1 can beef broth
1 can water
1 package of lipton onion soup mix
olive oil
salt and pepper
carrots
1 onion
potatoes (about 5 red)

Directions:
The most important part of making a good roast is browning it REALLY well before you cook it!

Preheat over to 300.

Sprinkle a few tbls of olive oil in your dutch oven (AKA spaghetti pot....the whole thing must be able to go in the oven). Turn heat to med high-high. Sprinkle all sides of the roast with salt and pepper....don't be stingy....put a lot on the roast:-) Brown all sides of the roast really well...a few minutes on each side. Poor can of beef broth in the pot with the roast. Take off heat. Add a can of water to the pot. Cover pot and put in over for 3 1/2 to 4 hours or until meat is super tender. If you are going to add carrots, onions and potatoes then do so about an hour before the roast is done. Mama adds some wine to hers too...but I don't and it's still totally YUMMY!

Make gravy with the juice from the roast and serve!!!!

Fish Tacos with Cabbage Slaw with Cilantro Rice


Let me start by saying I LOVE fish tacos and it took me FOREVER to find a recipe that I thought would be good. A lot of fish taco recipes have a mango salsa...yuck. I am not a fan of mango salsa. I love mango's and I love salsa...but for some reason I don't think sweet mango's and hot peppers go together...I am weird...I know:-)

I found this recipe and tweaked it to my liking. The textures and all the different flavors in this recipe makes for some good eats:-)

Taco Sauce:
1/2 cup plain yogurt
1 tbls mayo
3 tbls sour cream
1/2 tsp ground cumin
1/4 tsp cayenne pepper
juice of 1 lime
1/4 cup chopped cilantro
salt and pepper

Mix all together and store in fridge until tacos are ready to eat:-)

Tacos and slaw:

Ingredients:
3 cups thinly sliced red cabbage (raw)
1 chopped tomato
1/4 chopped fresh cilantro
1/3 cup sliced green onions
1 lime
4 tbls olive oil
salt and pepper
chili powder
4 tilapia fillets

Directions:
Mix first 4 ingredients in a large bowl. Add the lime juice, olive oil, salt and pepper and toss well. Set to the side.

Heat a pan at about med-med high heat and add a little olive oil to coat the pan. Sprinkle salt and chili powder on both sides of the tilapia and brown in pan until cooked through...about 2 minutes on each side. Once all of the fish is cooked drain on paper towel and chop fish into bite size pieces. Serve fish, sauce and cabbage slaw on warm corn tortillas. YUMMO!!!!!!!!!!!!!


Cilantro Rice:
Very simple and really good...and light! Cook the rice as you normally would. When it's done add lime juice...salt and pepper a little olive oil and fresh chopped cilantro. I liked it with one lime (juiced)...about 1/4 cup of chopped cilantro....1-2 tbls olive oil and salt and pepper to taste. What was really good...was adding some of the taco sauce to the rice:-) LOVED IT!

Ranch Style Chicken


This is another Pioneer Woman Recipe and it was YUMMY! I added sauteed mushrooms on top of the chiken and marinated my chicken in olive oil, ranch packet seasoning, garlic and salt and pepper instead of honey mustard and it was YUMMY! You should really try this one out. Play with it...and make it however you like it...Oh...and I didn't have peppered bacon...so I just used regular bacon. Really tasty!

Honey Mustard Chicken


Super easy with lots of yummy flavors!!

Ingredients:
3 chicken breasts chopped into bite size pieces
2 tbs red wine vinegar
2 tbs sugar
1/4 cup honey
3 tbs dijon mustard
1 tbs soy sauce
1/4 cup of orange juice
salt and pepper to taste


Directions:

Season cut up chicken with salt and pepper and any other seasoning you like....garlic powder..season all...etc. Saute the chicken in a little olive oil over med high heat. To make the sauce put the sugar and vinegar in a small saucepan and bring to a boil. Stir until sugar is dissolved (about 20 seconds...if that) then remove from heat. Add honey, mustard. soy sauce and salt and pepper and bring to a boil again...take off heat once it starts to boil...stir together well and add sauce and orange juice to chicken. Continue to saute the chicken until it's no longer pink. I served the chicken with rice...but it would also be good by itself....and this chicken only has 284 calories:-)

Chicken & Bacon Wraps



First time trying these appetizers and they were soooo good! I will make these again at our next get together. They are simple to make....and simple to eat!! I was lucky to have an awesome helper with me today. Haley and I had a great time getting the food together for the football game! Thanks Miss Haley:-)

Ingredients:
3 chicken breasts cut into bite size pieces
about 10 pieces of bacon cut in half
1/2 cup brown sugar
2 tbs chili powder
3 lbs Dijon mustard
toothpicks

Directions:

Preheat oven to 375
Mix brown sugar and chili powder into small bowl
Put dijon mustard in small bowl
Roll each chicken piece into the dijon mustard, wrap bacon piece around chicken then secure with a toothpick. Roll the chicken around in the brown sugar and chili powder mixture...make sure to cover it well. Put each completed piece on a broiling pan. Once you have finished all of them bake for about 25 minutes or until the chicken is done and the bacon is nice and brown.

Expect a little smoke to come from the bacon grease dripping into the broiler pan....no biggie though. These are great! The kids loved them too...even the picky eaters:-) I am sure you could dip them in a lot of different dips. I served them alone and they were good like that too!

Chicken Parmesan with marinara


One of my faves for sure...super yummy and a total comfort food.

Ingredients:

4 chicken breasts
spaghetti sauce
mozzarella cheese
parmesan cheese
olive oil
panko bread crumbs
garlic and herb bread crumbs
salt and pepper
linguine noodles

Directions:
Preheat over to 375. Mix panko bread crumbs and garlic and herb bread crumbs...enough to fill a plate. Cover each chicken breast with crumbs. Brown each piece of chicken on each side in olive oil. Poor spaghetti sauce in the bottom of a baking dish big enough for all four breasts. Drain each breast on a paper towel then put them on top of the spaghetti sauce. Start boiling the linguine. Bake chicken for about 20 minutes or until the chicken is done. About 5 minutes before the chicken is done...sprinkle shredded mozzarella and a little parmesan on top of the chicken. Once cheese is melted and chicken is done put each breast on top of cooked linguine and cover with sauce...YUMMY! Easy and delicious:-) ENJOY!

Oh and just in case you are wondering about the bread sticks (which ROCKED) All I did was use the Pillsbury roll of bread sticks....cooked them as directed...but about 5 minutes before they were done I pulled them out of the oven and brushed them with melted butter and them sprinkled parmesan cheese and garlic salt on them...YUMMY!

Ok I know this wasn't the healthiest meal...but T-Man was coming home tonight and I wanted to make something that I know he LOVES!

Pizza Dip


My friend Jennifer brought this to a Poker Party we had a few months back and we LOVED it!!! It's super easy to make and totally YUMMY! I made it for a party that Joel and I went to for New Years and it was a hit! Thanks Jennifer. Yes, there is a bite taken out of the dip in this picture....I just couldn't wait:-)

Ingredients:

Cream cheese
mozzarella cheese (shredded)
pepperoni
pizza sauce

Directions:

Put a layer of cream cheese in the bottom of a baking dish.....then add a thin layer of pizza sauce....then a layer of mozzarella cheese. Top with pepperoni and bake for about 10-15 minutes on 350 or until bubbly!! ENJOY!!!!
