Spaghetti Pie
Just another way to make spaghetti...easy...and still tastes good:-)
Ingredients:
1 jar of spaghetti sauce
1 lb ground turkey (or beef)
salt and pepper
1/2 large onion chopped
2 cloves of garlic pressed
1 package thin spaghetti noodles cooked and drained
mozzarella cheese
cheddar cheese
parmesan cheese
Directions:
Saute onions and garlic for about 5 min over med heat...add turkey and cook until done. Drain any liquid. Add jar of spaghetti sauce mix with turkey and onion mixture. Cook noodles and drain. In a baking dish layer spaghetti sauce, mozz cheese, cheddar cheese and parmesan cheese (just a little of each...less then 1/2 cup all together), then noodles. Repeat and finish with cheese on top.
Bake on 350 for about 20 minutes until cheese is melted and everything is hot and bubbly.

Sausage and Cabbage Stir Fry
I threw this together the other night and Thomas and I really enjoyed it. Super easy...and good for you:-)
Ingredients:
I package of beef sausage
1 head of cabbage...green or red...or mixed 1/2 of each like I did
1 tsp cayenne pepper
salt and pepper
olive oil
one package sliced mushrooms...I used baby portabellas
1 bell pepper any color
1/2 large onion chopped
You can add any other veggies you like to this dish...
Directions:
Heat a little olive oil in pan on med high. Add sausage and bell pepper...cook for about 2 minutes...then add everything else except the cabbage. Stir fry for about 2 more minutes. Last add the cabbage and stir fry for another few minutes until the cabbage is cooked...but not mushy. Season with salt and pepper. Serve!!! YUMMY!!!!

BBQ Pork Chops
These were really good and super simple to make. If I had an onion I would have added it...but didn't have one on hand.
Ingredients:
3-4 boneless thick cut pork chops
BBQ sauce
onion (if you have one on hand)
salt and pepper
garlic powder (or fresh if you have it)
olive oil, butter
Directions:
Put a tablespoon of butter and a dribble of olive oil in the skillet(FYI...butter and olive oil together will not get too hot)...heat to med high. Brown chops on both sides for about 2 minutes each side. After the chops are brown...lower heat to low...add BBQ sauce to pan...about a cup. Flip chops back and forth to cover with sauce...add onions now if you have them....cover pan and simmer for about 10 minutes or until chops are done.

White Chocolate Blueberry Ginger Cookies
OMG...I found this "healthy" or I guess you could say "healthier" cookie recipe. I am no Betty Crocker...but would love to learn more about baking...and don't want to get fat in the process...so I have decided to only try healthy baking recipes....ok...maybe not "only"...but mostly:-)
Have you ever cooked with crystalized ginger??? Yeah...you and me both....well it's GOOD STUFF!!!! You have to try these cookies....just trust me when I tell you they are delicious!!! Just as delicious as any of the cookies that are full of chocolate, sugar and butter...yeah really:-)

Southwest Turkey Burritos
I made these for supper tonight...they aren't a lot different from regular burritos...just a little healthier:-)....and they were delicious!!!
Ingredients:
Flour tortillas (wheat would be better...but I didn't have any)
1 lb ground turkey meat
1 package taco seasoning
lettuce
sour cream
1 can of corn
1 can of black beans
southwestern salsa (any kind)
cheddar cheese
Directions: Make taco mixture as package says. Heat tortillas....Build burrito as usual.....with meat, beans, corn, lettuce, sour cream, cheese and salsa. I would have added avocado and tomatoes if I had some..mmmm...good!!!

Meatball Sliders
So easy...fun to make....and delicious!!!
Ingredients:
Bag of frozen meatballs (or make your own)
Package of Hawaiian sweet rolls...mmmmm
Provolone cheese
salt and pepper
your favorite jar of spaghetti sauce (or make your own)
Directions:
Pour sauce in pan...add meatballs....simmer on low for about 30 minutes until meatballs are hot. Toast your bun (or not) add meatball...melt cheese....and serve:-) YUMMY!!
Mushroom Pork Chops
MMMM...these are sooo good....and REALLY easy to make:-)
Ingredients:
4 pork chops (thick boneless)
salt and pepper
garlic salt
season all
1/2 onion chopped
1/2 pound fresh mushrooms sliced
1 can of cream of mushroom soup
Directions:
Season pork bops...brown in skillet (med high heat) with a little olive oil. Move chops to one side of the pan and add onion and mushroom. Saute for a few minutes...then add mushroom soup...bring down to simmer...cover and let cook for about 25-30 min or until the pork chops are done.
