Pea Salad


Even if you aren't a pea lover you might still like this salad! A girl I work with makes it at all of our work gatherings and everyone LOVES it! Me included:-) It's simple to make and a perfect side dish for supper or something to bring when going to a cookout!

Ingredients:
2 cans of peas drained
1/2 onion chopped small
1 handful of shredded cheddar cheese
2 tablespoons of mayo
2 tablespoons of sweet pickle relish
2 eggs boiled, peeled and chopped
salt and pepper to taste

Directions:
Mix everything in a bowl...add more of anything you need to your liking:-) Serve right away or refrigerate until served. I think it's better once it sits in the fridge for a while.

Lime Chicken


Ok...so my step daughter Haley is SUPER picky!! I don't make weird stuff....but she doesn't seem to like ANYTHING I cook...so I am trying to find healthy recipes that she will eat. She will always eat fast food...candy...etc....like most kids....but has a hard time with healthy food. She mentioned that her Mom makes a lime chicken that she really likes...so I got the recipe from her Mom. It's marinating today and I will grill it tonight. I have tried a lime chicken before that wasn't so great...didn't have much flavor...hopefully this will turn out better!! I will post a picture tonight after it's been grilled! I will let you know how they turn out!!

Ingredients:
3 Chicken Breasts (pound down a little so they will cook evenly)
1 lime juice concentrate ( I am using the frozen lime margarita mix because I have it in my freezer)
1 chopped onion
4 garlic cloves peeled and chopped
pepper

Directions:
Mix all ingredients together and marinate all day.

Grill...and enjoy!

UPDATE:
Well..... Joel didn't like the chicken...but I did. It didn't have tons of flavor...but still wasn't bad. I will make it again. The only thing I will do differently is brush a layer of BBQ sauce on the chicken right before it comes off the grill!

Cheesy Pigs in a Blanket


Great snack for everyone:-) They are really easy to make and taste great!!!

With 8 crescent rolls
cut 4 hot dogs in half
split each hot dog half down the middle and stuff with cheddar cheese
...
roll each dog in crescent roll
bake for 15-20 minutes until crescents are brown


dip in mustard...ketchup...ranch...whatever you like!

Pizza Snack Bites


I had some wheat wraps left over that I had planned on using fir sandwiches...but it didn't happen...and I sure don't want to waste them....so I decided to make some pizza bite snacks today. They hit the spot!! Kids LOVED them! Great snack to eat up while watching football:-) The picture isn't the best...but you get the idea:-)

Brush each wrap with olive oil on both sides...bake in oven (370) for about 5 minutes...until crispy. Take out of oven and spread pizza sauce, cheese and whatever toppings you like:-) Put back in the oven for about 5 more minutes...until cheese is bubbly....cut up and serve...easy as pie!!
