Veggie Wraps


I made these for lunch at work yesterday and they were YUMMY!!!!!!!!! What a great healthy lunch...and tasty too! I took a few pics...but they turned out really bad...so I just took the picture from the website. If you are looking for a new healthy "light" lunch you should try these:-)


3 tablespoons of hummus - I used the Pine Nut Hummus by Sabra from Kroger
a handful of Lettuce
a handful of Diced Seedless Cucumber
a handful of Diced Tomatoes, seeds removed
a sprinkling of thinly sliced scallions (aka green onions), to taste
a sprinkling of crumbled Feta Cheese


Spread with entire wrap with hummus and sprinkle with the other ingredients, leaving a border without filling along the far end. A little goes a long way, and too much filling will make it hard to wrap up. Wrap up and ENJOY!!!!!!!!!!!!

BBQ Pork Ribs


YUM!!!!!!!!!!!!!!! Everyone loves ribs right? Joel and I found a recipe that we LOVE!! Some people say you aren't supposed to bake ribs....I say.....whatever!

Directions:
Rinse rack of ribs under cool water..pat to dry. Season both sides with salt, pepper, garlic and a little season all. Place ribs in baking pan bone side down. Cover with foil and bake on 250 for about 2 hours or until the robs are done. Take ribs out of the oven...brush with BBQ sauce...wrap in foil and put on the grill for about 15-20 minutes. Pull ribs out of foil...and finish them on the grill while brushing more BB sauce on them. YUM!!! These were delicious...fall off the bone...greatness!!!
